Ian's Gourmet Milk Free Chocolate Ice Cream
I have a friend who can't have milk products so I made a Soy-based ice cream
that tastes amazing and you wouldn't know it didn't have any cream in it at all!
Warning: this stuff is quite rich, consume excessive quantities at your own health risk!
1 13.5 oz (400 ml) can of Coconut Cream
1 cup Soya Milk (vanilla is good)
5 tbsp coconut powder
5 tbsp dark coco powder
1/4 c corn syrup
1/2 cup sugar
1 tsp vanilla extract
2 full squares (57 g) of Hershey's Chipits semi-sweet chocolate, or similar
3 egg yolks
4 tbsp of Nescafe's coffee syrup or equivalent shots of espresso
Combine ingredients, making a custard, heated to about 200 F.
Chill overnight, mix well again, and then you may want to add a tall shot of Amarula liquor or Irish Cream
Freeze it, try to mix it up as best as you can during freezing, and then freeze again, or for better results
get yourself an ice cream maker. =)
Ian's Pizza Dough
1 c all purpose or bread flour
1/2 c rye flour
100 ml water
1/2 tsp salt
1 tsp yeast
2 tbsp sugar
3 tbsp olive oil
1 tsp wine vinegar
To be kneaded in later:
1/2 tsp oregano
1/2 tsp basil
1/4 tsp hot pepper flakes
2 tsp parmesean
May need to double/tripple recipie as needed.
All Purpose Greek Seasoning:
1 portion ground oregano
1/2 portion cumin
1/2 portion coriander
1/2 portion salt
1/4 portion black pepper
1/4 portion hot pepper flakes
Try marinating some chicken using this seasoning, lots of minced garilic, a
bit of wine, and olive oil.
Earl Grey Salmon - this isn't my recipie, but it sure is tasty!
6-8 fillets of salmon
Marinade (the best!)
1/2 cup maple syrup
1/4 cup soy sauce
2 cloves garlic - minced or chopped
2-3 earl gray tea bags
Sauce (optional)
1/2 cup mayonnaise
1/4 dijon mustard
1/4 cup maple syrup
Break open the tea bags and mix tea with the remaining marinade ingredients.
Coat salmon with marinade. Cover and refrigerate overnight. Place salmon on
a rack on a baking sheet. Bake 15 to 20 minutes to desired doneness. Mix all
sauce ingredients together. Serve on the side with the salmon
